This is in fact much nicer than it sounds, and would make a good substitute for a Christmas Cake, if you wanted to do one quickly without all the faffing around.

Ingredients

11b/450g Mixed Dried Fruit
8oz/225g Butter (unsalted)
12oz/350g Soft Brown Sugar
3 Size 3 Eggs Beaten
12oz/350g Self Raising Flour
Pinch of Salt
I teaspoon of mixed spice
9 inch diameter tin at least 2 inches high

Method

Set oven to Gas Mark 4 or Electric 180

Put the fruit into a large saucepan with 1/4 pint of water.
Bring to the boil, and simmer for 15 mins, then drain off the water and set aside
Melt the butter in another large saucepan, remove from heat add sugar, and fruit and mix well.
Then beat in the eggs a little at a time.
Sift the flour, salt and mixed spice then fold into the fruit mixture.
Turn into the prepared tin and bake for approx 1 1/4 to 1 1/2 hours
If a skewer comes out of the center clean then its done.

Cool and put in a tin for two days at least if you can wait that long.

Now that sounds easy enough! I am not a big admirer of most fruit cakes, particularly any that have candied peel. However, my better half loves fruit cakes, so as a surprise and special treat I will make her one.

But me thinks me shall calls it, Skye's Fruit Cake, sounds ever so much nicer than Boiled. Boiled Fruit Cake Icon_lol

No problem at all Bob,

With soaking the fruit, the cake becomes really moist.

BTW I don't like candied peel either, but I sometimes put in some cherries and nuts.

Hope Moe likes it, I am sure she will.
